Job Description

Responsible for partial or complete production of food items under the guidance of supervisor in
keeping with the highest safety and quality standards.
Duties:
 Assumes shift supervisor duties in the absence of Chef de Partie/Supervisor, or when
instructed
 Cooks and otherwise prepares food items according to SRI standards or special-event
recipes, pictorial illustrations, written and oral instructions ensuring consistency and
exacting quality standards are maintained
 Keeps work area, equipment and tools in immaculate condition
 Continuously cleans spillages and splash-marks on work surfaces
 Processes trimmings in the prescribed manner (re-usable versus garbage). Stores
reusable/edible portions adhering to HACCP standards. Discards waste and garbage in
the bins provided
 Utilizes designated kitchen rags for cleaning (never uses dinner napkins or other table
linen)
 Mops and sanitizes floors and performs general cleaning duties in the kitchen during
quiet periods
 Retrieves from and returns to storage food items as directed by supervisor

 Performs buffet-attendant duties and replenishes food items as required
 Performs first aid and other emergency response activities (e.g. extinguishing grease
fires)
 Works a station other than scheduled when directed to do so by supervisor
 Performs any other duties assigned

Requirements:
High School Leaving Certificate/Diploma
Minimum of 3 years’ experience in a commercial kitchen
Customer Service / Service Excellence
Required to work outside of normal working hours, on weekends and public holidays
Required to work various shifts including nights
